A lot of luck would have to be with the hiker who tries to accurately push a stick into the spokes of a wheel moving in the opposite direction of the hiker. It would be easy peasy to stick out a hand/arm to come in contact with the handlebar of the passing biker to force the front wheel to turn, violently, sending the biker sprawling.
Ooopppssss, sorry for accidentally coming in contact with the handlebar of your bike.

At least the stabber turned himself in. He, at least, has witnesses that most likely will support his side of the altercation & what led up to it.
Since the stabber has been charged, he'll have to defend himself in court. I wonder IF the victim will agree to testify against the stabber. IF the victim does agree, he'll be subject to cross examination by the defense attorney + the victim can then be countersued if the stabber is acquitted.

@chumley - As a quick aside, Phillips was once a client of mine and I'd swing by every few months to sell him stuff. I'd cringe at the poor souls waiting in the lobby, think they trolled the finer trailer parks in Apache Junction looking for clients.

Throw a handful of dirt in the face or some pepper spray in front of a speeding, oncoming biker. You can't miss & should effectively blind the biker. I'm going to have to keep this in mind as the preferred way to deal with speeding & or overly aggressive bikers. The biker won't have any description of you; won't remember if you are male/female, adult/child.

Stick your hiking pole into the spokes of the rear wheel. Then you damage his bike and not the rider and he has to return to the his vehicle pushing his damage bike along with his damaged ego. But only do this when the rider is CLEARLY IN THE WRONG so he cannot successfully sue you.

Do you think that they will just ride off into the sunset? You say they wont have any description of you as if they didn't see you the whole time theyre riding up to you.

Just depends on what you're willing to do at the time; how much of your brainmatter is on autopilot. I wonder what happened to a guy who approached me with a knife to try and steal my purse when I lived in San Diego years ago. I was probably a good 15-20 years older, but I wasn't the one left crying on the pavement; and I kept my purse.
