On a related note, last weekend ate a non-factory marshmallow made by a confectioner in Lowell, MA. It was dipped in sea salt and caramel, and it was really, really good. Like PhilMW, I'm not a big s'mores fan. The marshmallow is my least favorite part. I'd rather just eat the chocolate and graham crackers.

That sounds like it would be pretty good. Hooray for non-factory foods!
Also, I feel like everyone is forgetting the best part of s'mores, the peanut butter!
