Ideas for a tasty and lightweight meals?

If youve got a decent recipe for some lightweight meals (breakfast, lunch or dinner) please share them on this thread.
Were getting ready for a seven night backpacker, last time I did that I nearly killed some small furry animals just to get some variety into the mealplan!
Ill contribute one:
Dried chili
fast cook noodles(like macaroni)
TVP
dried tomatoes
tabasco sauce
parmesan cheese (on top)

Sue Sweet bag o' chunked chicken, homemade salsa (I love my vitamix), chips, shredded mexican cheese blend (melts when you put it over everything on a warm day), and an avocado (chopped and mixed with the salsa at the meal for fresh guacamole if you prefer). Put it all together and instant trail nachos.

Anyone seen this anywhere else in the valley, Ftn Hills is a bit of drive for me.

Nido is available in the Hispanic section at (Te)Wal-Mart, Fry’s, and elsewhere. Es mucho gusto. You can measure it out into a ziplock with your cereal of choice pre-backpack, and just add water for a quick breakfast.

food city. bashas. fry's. if its in the highly hispanic populated Fountain Hills, you should be able to find it in Phoenix.

I prefer pasta with loads of parmeseam cheese packets from pizza hut.. Toss in a little dried basil and crushed red pepper and even a little packet of olive oil (available at az hiking shack) and BAM! Even Emeril couldnt pass that up..

Sounds good. Beats eating ramen and Kraft mac n cheese. (That comment was aimed at a particular person...)

I guess 'tukee is too all white, none at Basha's, Fry's (2), Safeway or Trader Joe's. Will look around in the big wide world tomorrow.

Food City is guaranteed to have it. I found it in 3 sizes there, kept not in the "Hispanic" aisle but near the other powerdered milk/oatmeal section
another great idea for quick meal, and a "no cook" meal if you decide to forgo a stove, is couscous.
add slices of bell pepper, onion, some chicken bullion and a bit of TruLemon (or real lemon zest) with salt and red
pepper flakes -
makes a very tasty pasta dish.
or, visit the dehydrated meals from enertia: (dehydrated, NOT freeze dried)
